Za’atar (wild thyme) has become a symbol of Palestinian resistance, signifying memory and cultural heritage. In 1977, Israel enacted a law prohibiting the foraging of wild za’atar, an essential herb and spice, declaring it a protected species. Since 2006, Palestinians have faced prosecution for the simple act of picking the wild weed on lands that once belonged to their villages, while Israeli settlers grow and sell it commercially. Despite these challenges, za’atar persists.

We cook with it, speak its name, and resist – with every bite.

The Palestine Children’s Relief Fund is based in Burbank, California, and was awarded a 97% rating for Accountability & Finance by Charity Navigator. Gabbiani’s original artwork is an interpretation of a photograph by Canaan Palestine, which partners with over 2400 artisan family farms to encourage Fair Trade principles and Regenerative Organic practices for the production of olive oil, za’atar, and other products that continue Palestinian agricultural and culinary traditions.

PCRF Mission Statement

“The Palestine Children's Relief Fund (PCRF) is a non-political organization established in 1991 by concerned people in the U.S. to address the medical and humanitarian crisis facing Palestinian youth in the Middle East. The main objective of the PCRF is to identify and treat every child in the Middle East in need of specialized surgery not available to them locally. We locate, sponsor and run volunteer medical missions to the Middle East in adult and pediatric cardiac surgery, pediatric cardiology, plastic and reconstructive surgery, maxillofacial surgery, pediatric urology, ophthalmology, vascular surgery, pediatric orthopedic surgery, occupational therapy, and other specialties. Since our founding, over 2,000 children have been, or currently are being treated, outside of the Middle East through the PCRF. Our mission is to provide medical and humanitarian relief collectively and individually to children throughout the Levant, regardless of their nationality or religion. We envision a world where all children in the Middle East have access to quality medical care, humanitarian aid, and specialized surgical procedures.”

Francesca Gabbiani has created work commenting on, and fundraising for, social and political causes throughout her career, often focusing on ecological and ecofeminist concerns. Combining intricately layered cut paper, mixed media washes, and airbrush, Gabbiani's paper paintings pair literary influences with her own photographic documentation of urban environments in disastrous, damaged, and regenerative states.
